Healing Mung Bean Soup / Terry Walters

We were so thrilled to be able to welcome Author, Educator, and Clean Eating Expert Terry Walters as a special guest on our recent West Hartford Kitchen Tour which benefited The Be Thoughtful Movement. As a special treat, Ms. Walters cooked up a delicious soup, serving samples to our many “tourists” throughout the day. She has been gracious enough to write a little bit about the soup for our blog and share the recipe. Thank you Terry!

“This healing mung bean soup is the first soup I make each fall and the last soup I give up in the late spring. It is particularly calming and easy to digest, high in easily-digestible protein, great for detoxifying, and promotes alkalinity and balance. Mung beans cook up quickly, making this soup come together in almost no time (and these nutrient-packed beans won’t give you gas like other legumes, so you can go ahead and enjoy care-free!). I like to double this recipe so that I have plenty for breakfast during the week (served with a scoop of ghee and a handful of toasted pumpkin seeds) and extra to store in my freezer for another day.”
